Cake with Fruit Cream (Gluten-Free)

Cooking time — 75 minutes.


For cake:

  1. 5 eggs
  2. 100g ground pumpkin seeds
  3. 100g ground almonds
  4. a pinch of salt
  5. sugar to taste
  6. 100ml milk (optional — coconut milk or water)
  7. a teaspoon of baking soda (pour with a tea spoon of mineral water Radenska)
  8. vanilla powder

For cream:

  1. 500g mascarpone cheese
  2. 400g cream (sweet creams)
  3. 200g yogurt
  4. Sukrin sweetener to taste
  5. 100g berries
  6. 100g sweet cherries
  7. 2 small packages of gelatin


  1. Separate whites from yolks. Use whites to make “snow” (whip them). In a separate bowl, mix dry ingredients and add them to the whites. At the end, add egg yolks and milk. Bake cake at 180 degrees for 20 to 25 minutes (the diameter of a baking pan should be 30 cm).
  2. Make cream according to the recipe on a gelatine package and do over the cooled cake. Cover top with fruit.
