Cuisine of Slovenia’s Regions: Curd and Fruit Pie

A dish of thin crispy dough stuffed with hazelnuts. Cooking time – 45 minutes.

Ingredients (for 6 portions)


  1. 300 g flour,
  2. 200 g hazelnuts,
  3. 300 g butter,
  4. 2 tbsp vanilla sugar,
  5. 4–5 tbsp white wine,
  6. salt.


  1. 350 g frozen fruit (assorted),
  2. 2 tbsp vanilla sugar,
  3. 0.5 tsp cinnamon,
  4. 0.5 lemon juice,
  5. 250 g curd cheese,
  6. 150 g cream,
  7. 1 tsp Gustin corn starch.


Put frozen fruits in a colander and sprinkle with sugar. Fry hazelnuts in a skillet without oil. Rub the nuts wrapped in kitchen paper to peel them. Grind the nuts.

Quickly mix flour, chopped nuts, salt, sugar, cold butter and wine in a slow-cooker.

Wrap the dough in foil and refrigerate. After about 1 hour, roll the dough out and put on a baking sheet. Poke it with a fork and refrigerate.

Stir the curd cheese, cream, cinnamon, starch and lemon juice with a spoon. Add strained fruits.

Fill the dough and bake for 30 minutes in a preheated oven at 180º C.
