Cuisine of Slovenia’s Regions: Fried Trout Fillet with Sesame, Vegetables and Spaghetti

Cooking time – 60 minutes.

Ingredients (for 4 persons)


  1. 4 trout fillets (250–300 g each),
  2. salt,
  3. sesame seeds (peeled),
  4. vegetable oil.

Vegetables with spaghetti:

  1. fresh vegetables (carrots, two celery roots, leeks, young onions, fresh green beans, two bulbs of garlic, zucchini, pepper, etc.),
  2. soy sauce,
  3. oyster sauce,
  4. garlic,
  5. fresh red feferoni pepper,
  6. fresh ginger,
  7. lime juice,
  8. sesame oil,
  9. spaghetti.


Roasted sesame:

Fry sesame seeds, all the time stirring, in a small skillet without adding oil until the light brown colour. Remove from heat and allow to cool.


Scale the trout, wash and cook the fillets (without removing the skin). Dry the fillets with absorbent paper. Salt and fry in vegetable oil. Remove excess oil with absorbent paper.

Vegetables with spaghetti:

Cook the spaghetti according to the manufacturer’s instructions. Cut vegetables into strips or small pieces and fry with the addition of a small amount of vegetable oil. Add strained spaghetti, season with soy and oyster sauces, sprinkle with finely chopped ginger, sliced garlic, add chopped pepper slices, sesame oil and a few drops of lime juice. Stir and fry a little more (1 minute).

Serve in portions on plates sprinkling the dish with roasted sesame. One portion of spaghetti with vegetables is served with two fillets.
