Cuisine of Slovenia’s Regions: Gibice (Prekmurje Pancakes)

Yeast-free pancakes of Prekmurje style.


  1. 500 g white wheat flour,
  2. 1 tsp salt,
  3. 1 tsp pork fat,
  4. milk (if necessary).


  1. 1 tsp pork fat,
  2. 200 mL sour cream.


Make dough from the above ingredients, divide it into two parts and roll into layers for two large baking trays (2–3 mm thick each). Place the dough in the trays, pierce it several times with a fork and bake at 200 ºС. Cut the ready “gibice” (hot or cold) and pour with hot milk so that they are well soaked. Wait until fat dissolves and add sour cream. Boil the mixture over moderate heat and pour it over the pancakes.

The dish is served for dinner or as a dessert. If you want something sweet, you can use poppy filling (4 tablespoons of ground poppy and 1 tablespoon of sugar) or add honey. The amount of poppy and sugar is taken by taste.
