Cuisine of Slovenia’s Regions: Green Cabbage in Sauce with Mashed Potato
Ingredients
- 300 g chopped fresh cabbage,
- 150 g soy flakes,
- bay leaves,
- 4 tsp cumin,
- 3–4 tbsp agave syrup,
- 1 tbsp olive oil,
- 4 tsp ground black pepper,
- a pinch of marjoram,
- a pinch of thyme,
- 10 cherry tomatoes,
- 4–5 medium potatoes,
- 2 tsp margarine (vegan),
- 3 cloves garlic,
- salt and bell pepper.
Instructions
Put the diced potatoes in salted water to boil. Add a tablespoon of olive oil and agave syrup to the pan. Cook for a couple of minutes.
Add all the spices and cook for 2 minutes. Add the pre-soaked soy flakes and cabbage. Cook for 5 minutes.
Add cherry tomatoes, cook for 5 minutes, then add water. Boil for about 20–25 minutes more.
Take out the cooked potatoes, add margarine and chopped garlic. Mash the potatoes.
