Cuisine of Slovenia’s Regions: Rice with Spinach, Tofu and Dill
A light and very tasty dish. Cooking time: 30 minutes.
- 200 g rice,
- 200 g spinach,
- 150 g tofu,
- leek (to taste),
- chopped almonds (to taste),
- coconut oil,
- raisins (to taste).
Boil rice in salted water. When it is ready, add the spinach and set aside for about 3 minutes. Then add chopped almonds.
Boil dill until softened. Then add raisins.
Fry leek in coconut oil, then add salt, pepper and breadcrumbs, and finally add chopped tofu. Fry all together for about 10 minutes.
