Cuisine of Slovenia’s Regions: Strawberry Cake with Mascarpone
Cooking time – 60 minutes.
- 4 eggs,
- 4 tbsp sugar,
- 4 tbsp flour.
- 100 g sugar,
- 500 g strawberry,
- 500 g mascarpone,
- 150 g low fat cottage cheese,
- 200 g cream,
- 30 g gelatine,
- + 100 g strawberry for decoration.
Preheat the oven to 180°C. Separate the whites and yolks. Beat the whites until stiff peaks, then add sugar, yolks and, at the end, flour. Put baking paper on the baking sheet. Bake in the preheated oven for max. 10 minutes. Cool the cake a little bit and remove the baking paper. Put the cake back into the oven. It should cool well.
Meanwhile, make the filling. Wash well strawberries and cut them into small pieces (leave several strawberries for decoration). Put strawberries, mascarpone, cottage cheese, and sugar into a deep bowl. Mix well. Beat the cream with a blender until thick and add it to the rest of the ingredients. At the end, add the gelatine.
When the cake cools, top it with a part of fresh berries, cover with cottage cheese and strawberry mixture, smooth and decorate with the remaining berries. Put the ready-made cakes in the frig for 35–40 minutes.
