Cuisine of Slovenia’s Regions: Zucchini Baked with Minced Meat and Cheese
Cooking time: 75 minutes.
Ingredients (for 4 portions)
- 4 small zucchini,
- 250 g minced meat,
- 150 g cheese,
- 1 egg,
- 1 tsp tomato paste,
- 1 onion,
- 2 cloves of garlic,
- 1 tbsp vegetable oil,
- salt, pepper,
- ground bell pepper,
- 1 tbsp margarine to grease a baking sheet.
Rinse the zucchini thoroughly, cut in half, pulp out with a teaspoon, salt and put them with the hollow side down to drain the water. Chop about one-third of the pulp (it will be later added to the minced meat for stuffing the zucchini).
Fry the onion in vegetable oil. When the onion turns golden, add minced meat, then a pinch of salt, pepper, ground bell pepper and tomato paste. Simmer until all liquid evaporates, remove from heat and allow to cool.
Add half of the previously grated cheese, finely chopped garlic, chopped zucchini pulp and an egg to the cooled minced meat. Mix it thoroughly.
Stuff the zucchini with cooked mass. Cover the baking sheet with the baking paper previously greased with margarine. Place the zucchini in the oven preheated to 200º C and bake for about 20 minutes.
Then take them out. Top with the remaining sliced cheese and bake for another 5 minutes until the cheese is melted.
