Fižolova Mineštra—Bean Hotpot

Ingredients for 4 portions:

    1. 500 g boiled beans,
    2. 200 g pasta,
    3. 1 onion,
    4. 3 cloves garlic,
    5. 1 pinch marjoram,
    6. several parsley beams,
    7. 1 bunch of celery,
    8. 2 bay leaves,
    9. ground pepper,
    10. a pinch of ground red pepper,
    11. 3 tbsp olive oil,
    12. 1 tsp tomato sauce,
    13. salt.


Peel and finely chop onion and garlic. Process one part of beans through a meat grinder or a blender. Peel, rinse and finely chop celery.

Fry chopped onion in olive oil. Add beans puree, mix well and pour with water. Add chopped parsley and garlic, celery pieces, marjoram and bay leaf. Add pepper and salt to taste. Put on medium heat and bring to a boil.

When the soup is boiling, add pasta. Then add the remaining beans and cook until pasta is soft.

When the dish is almost ready, add a bit of ground red pepper and a teaspoon of tomato sauce. Mineštra is served to the table with bread in tureens or in deep plates.
