Fried Elderberry Flowers

Ingredients for 4 portions

16 elderberry flowers
2 eggs
250 g flour
2 dL dry white wine
1 dL sunflower oil
10 g brown sugar
1 pinch of salt
1 pinch of ground cardamom



Separate yolks from whites. Add flour, wine, sunflower oil, egg yolks, sugar, salt, and cardamom into a deep bowl. Whisk quickly the dough and leave it for 30 minutes. Rinse thoroughly the elderberry flowers and dry them on paper towels.

Beat up egg whites carefully and gradually add them to the dough by stirring. Heat sunflower oil in a deep frying pan. Dip separately each elderberry flower into the obtained mixture and fry until golden colour.

When frying, turn flowers so that they were cooked evenly on both sides. Then put ready flowers on paper towels to remove excess fat. Sprinkle ready dish with powdered sugar and serve with cherry compote or elderberry juice.
