Haloze Layer Cake (Haloška Gobónca)

Gibanica is a popular Slovenian dessert. The filling usually includes apples, curd cheese, poppy seeds, nuts and raisins. There are different ways to cook layer cakes (or gibanicas).


 Yeast dough:

  •  250 g high-grade flour,
  • 250 g wholemeal flour,
  • 40 g butter,
  • 250 mL milk,
  • 1 tbsp. sugar,
  • 1–2 eggs,
  • 30 g yeast,
  • 10 g

Curd cheese filling:

  •  1 kg curd cheese,
  • 200 mL sour cream,
  • 150 g sugar,
  • 80 g high-grade flour,
  • 2 eggs,
  • cinnamon to taste.


  • 200 g sour cream,
  • 2 eggs,
  • sugar to taste,
  • 25 g


Knead the yeast dough. Leave it to rise until it doubles in size. Gently mix all the ingredients for the curd filling in a bowl.

Preheat the oven to 180 ºC. Roll the risen dough into a layer about 1.5 cm thick. Put it in a ring-shaped baking dish, put the dough edges a little upward along the perimeter.

Prepare sour cream sauce by mixing all the ingredients. Put the curd cheese filling on the dough. Pour it with the sauce.

Put the baking dish into a preheated oven for about 30 minutes. Gibanica should become golden-yellow. Cut the still warm cake into triangular pieces and serve to the table.
