Krumpentoč – Potato Omelette in Zasavje Style
A recipe of a simple potato dish, which appeared in the Slovenian cuisine more than 200 years ago.
- 800 g potatoes
- 2 eggs
- 1 tbsp white flour
- fat for frying
- Peel and grate raw potatoes. Squeeze out excess liquid from the potato mass.
- Add salted whipped eggs, knead, add flour and mix thoroughly with a fork. Put some fat into a frying pan and cook pancakes until the golden crust.
Use a small amount of fat because the pancakes should be half-fried and half-baked. Before baking, heat the fat well. Bake pancakes over medium heat. Pancakes are usually fried in a frying pan for 4 pieces. Put dough into the pan and, using a usual tablespoon, form a small pancake. Serve a plate of green salad as a complement to this dish.
