Lamb Chops with Tomato Sauce and Peppermint
A savoury dish of the Slovenian national cuisine.
- 250 g finely chopped cherry tomatoes
- 1 large onion (½ — finely chopped, ½ — cut into thin slices)
- 4 large lamb chops or tenderloins without fat
- 1/2 lemon (juice)
- 2 stalks of fresh peppermint with cut leaves
- salt and black pepper
Preheat oven to 190 °C. Mix tomatoes, finely chopped onion and peppermint in a bowl. Pepper and lightly press with a tablespoon to squeeze some juice from tomatoes. Cover the bowl with a lid and place in a cool place.
Cut onion into thin slices and lay out on a baking sheet. Then put there the meat. Pour meat with lemon juice and season. Bake for 40–45 minutes until the meat and the onions are soft. Serve chops with onion slices laid on the top and sauce to taste.
