Omelette with Asparagus and Bacon (Fritaje ali frtalje)

Ingredients:

  1. 1 shallot,
  2. 1 small bunch of asparagus,
  3. 1 green eggplant,
  4. 4 slices of bacon,
  5. 4 eggs,
  6. 3 tbsp milk,
  7. 1 tbsp flour,
  8. 1 large bunch of dry marjoram or 2 sprigs of fresh marjoram,
  9. grated parmesan,
  10. salt,
  11. pepper,
  12. olive oil.

Cooking

Cut the vegetables. Smash eggs in a bowl, salt and pepper. Add milk, flour and mix thoroughly.

Pour two tbsp olive oil onto a heated frying pan and fry the chopped shallot for 1 minute. Add asparagus, cook until soft. Then add chopped eggplant into the frying pan and fry for about 5 minutes. When the vegetables become soft, cover them with slices of bacon.

Pour the bacon with egg mixture, salt, pepper and sprinkle with marjoram. Cover the pan with a lid and cook until the bottom part of the omelette is baked (5 minutes).

Another way of baking is possible. Put a handleless pan with the omelette into the preheated to 180 °C oven for several minutes.

When the omelette is baked on both sides, put it on a wooden board and sprinkle with grated parmesan. Cut into pieces, sprinkle with more parmesan and serve to the table.
