Piran Bass Baked in Paper

Ingredients for 4 portions

800 g of Piran bass fillets (4 fillets)
1 big eggplant
1 celery
1 red pepper
10 black piped olives
2 cloves of garlic
1 sprig of rosemary
10 leaves of spring onions
2 teaspoons of melted butter
4 teaspoons of olive oil
1 dl white wine



Peel and wash eggplant, pepper and celery. Cut pepper and olives into thin slices. Cut eggplant and celery into small long pieces. Put vegetables into a bowl, salt and mix with chopped garlic, black olives, spring onions and rosemary.

Wash bass fillet and dry it with a paper towel. Cut four big rectangular pieces of paper for baking. Fold each piece in half diagonally. Put a piece of fillet on one side of the paper, salt it to taste, add vegetables with spices, and then fold paper so that fish is totally covered therewith. Stick the buttered edges.

Preheat oven to 180 C°. Put fillet on a baking sheet and bake it in a preheated oven for about 20 minutes. Serve the baked fillet in paper on plates as an additional (second) dish.
