Poprtnik—Sweet Bread from White Flour


  1. 1 kg white flour,
  2. 150 g butter,
  3. 50 mL curdled milk,
  4. 120 g sugar,
  5. 3 eggs,
  6. lemon peel,
  7. a pinch of salt,
  8. a cube of yeast,
  9. an egg for topping.


Make a starter by mixing a cube of yeast, 1 tablespoon of sugar, 1 tablespoon of flour and 10 mL of curdled milk. Melt butter in 40 mL of curdled milk, add eggs and sugar, and whisk together.

Make a hole in flower, pour the starter therein, add the egg mass, lemon peel and melted butter. Sprinkle the edges with salt. Beat the dough and leave to rise for 30 minutes.

Form a loaf of bread and leave to rise in a baking dish for another 30 minutes. Top the bread with egg. Preheat the oven to 180 °C and bake for about 50 minutes.
