Tuscan Salad

Ingredients for 4 portions:

  1. 500 g borecole,
  2. 80 g grated Parmesan cheese,
  3. 4 eggs,
  4. 4 tbsp olive oil,
  5. 3 tbsp lemon juice,
  6. 1 garlic clove,
  7. 3 pinches of salt,
  8. 1 pinch of ground pepper.

Cooking

Cut and mash with a fork the cooked and peeled eggs. Peel, wash and chop finely garlic. Mix olive oil, lemon juice, garlic, salt and pepper in a bowl.

Divided borecole into separate leaves. Cut off stiff stems, then clean, rinse and dry the leaves. Roll each leaf as a tube and cut into thin strips. Put borecole into a salad bowl and pour with sauce (dressing). Mix well. Add 2/3 of cheese and eggs and mix again.

Set aside the salad for 5 minutes and then top it with the remaining grated cheese and eggs and serve to the table.
